Elizabeth Rolon Oquendo or "Sarita" as she is known by most, was born October 9, 1961, in Bronx, New York to Abimael Rolon and Sara Oquendo. The third of six children, Elizabeth always found ways to make her siblings laugh and had an incredible sense of humor growing up. At the age of 26 Elizabeth gave birth to her first and only child, a beautiful daughter, Lisa Lopez, whom she absolutely adored.

Despite the hardships Elizabeth faced in life she remained a woman of virtue and upheld her values in every situation, knowing that God and her family would see her through. She was a gentle soul with a nurturing heart who loved unconditionally and always sought to take care of those around her. Elizabeth would offer to cook or make coffee for whoever stopped by. The last ten years of her life, Elizabeth enjoyed spending time with and helping to care for her two granddaughters, they were her reason to keep going. Elizabeth undoubtedly fulfilled the commandment Matthew 22:39 "… thou shalt love thy neighbor as thyself."

Elizabeth gained her wings on April 20, 2023, surrounded by her father, daughter, son-in-law, sisters, brother-in-law, nieces, and nephews. Her family is comforted knowing that she is at peace, and she has gone to meet her baby sister and mother. Those we love never truly go away. Although they can no longer be physically present, their memory lives in us. Elizabeth will be missed dearly by all those who knew and loved her. May the winds of heaven blow softly and whisper in your ear how much we love and miss you!
